A Glorious Morning for You


A Facebook friend suggested that I post my recipe for Glorious Morning Muffins. These are wonderfully moist and flavorful muffins and as sweets go, are relatively good for you, what with the carrots, raisins and nuts. A great breakfast or anytime treat.

This recipe makes 24 regular-sized muffins, enough to have all you want and to share if you can part with them. 

I hope you enjoy them as much as we do. Everyone I have served these muffins goes "bonkers" for them. Enjoy!






Glorious Morning Muffins


The recipe

2 cups All-Purpose flour
2 teaspoons soda
1/2 teaspoon salt
1 teaspoon baking powder
1-1/4 cups sugar
1 cup cooking oil (I use Canola and reduce the amount to 3/4 cup with no adverse result)
1-1/2 cups shredded carrots
1-1/2 cups peeled and shredded apples
3/4 cup coconut
1/2 cup raisins (golden raisins are best but any will work)
2 teaspoons cinnamon
3 eggs
1 teaspoon vanilla
1 cup nuts

Beat the eggs with a mixer or by hand until thick. Add sugar,vanilla and oil and blend well. Sift the dry ingredients together and add to the egg mixture in small batches until blended. Fold in the remaining ingredients. Mix well.
Spoon into muffin tins either with or without baking paper cups. Bake at 375F. 18-20 minutes.




I find it easier to grate the carrots on an old-fashioned grater than to get out the food processor!

The knife sharpener handle is a handy-dandy tool for "chopping" the nuts. Again, saves getting out the nut grinder and having to wash it up at the end.

A whisk is perfectly acceptable for beating the eggs instead of getting out the hand mixer.

Colorful and healthy-looking ingredients. Note that I chop the applies with a knife instead of shredding them.

The recipe makes 24 muffins

Muffins ready to eat. They won't last long!

I'm making it tomorrow; although I'm already on a sweets high this week...entered several desserts in the Williamson Cty Fair baking competition, and was thrilled with my winnings. My mid-year resolution is to start eating healthier. This sounds like a great start...with a hot cup of Starbucks. Thanks!

  4. I have made almost the exact recipe, minus the apple and half the cinnamon, as a cake with cream cheese frosting.
    I agree it's easier to do most things by hand when cooking for just the two of us - most of those appliances that make the cooking easier are more work to clean, too.

      What is the name of your cake? I make an apple cake thAt tastes similar to these muffins. Gadgets can be a pain to clean!

    2. It's just my Aunt Jacquie's Carrot Cake. She was an amazing cook. She divorced my uncle after he brought my Grandmama to live with them - and moved out as soon as he could get his job to transfer him to a different city, when he remember how awful she was. (Grandmama, not Aunt Jacquie.) And my lovely aunt took care of his mother until she died.
      I think I'm going to try her recipe with crushed pineapple one of these days. Which is why the apple addition intrigued me.

    3. OK thanks; just curious. I make a carrot cake, too, but it doesn't have raisins but the taste is almost the same as the muffins minus the apples and raisins.

  5. How funny had not heard the word glorious used for a while...while I was in London watched the film 'Glorious 39',great British film set just before the 2WW.

    BTW, I see you have made a glorious batch of cakes.

      Have been missing you and thought you probably in London for an Olympic event. Everything was so flawless in the conduct of these games, a big accolade to London for a spectacular event. I love the time period "between the wars," maybe I should check out that film. Do you recommend it?

    2. We enjoyed the acting by talented British actors,it is set just before the outbreak of WW2 in the country about a county family.It is full of nuances.....I think you might enjoy it.

    I wish her a belated Happy 91st Birthday bet you all had fun on her Special day.

    What a beautiful woman she was/is still looks so young..what a role model for you girls. Ida

  7. Amazing, I seem to have about all the stuff needed for these cakes.
    I appreciate the fact, that you made these cakes " the good old way ".
    Having only a mixer myself ( which I seldom use ), I agree with you - waist of time pulling the gadgets out- for these cakes.
    It´s also more ecological and more home-y.
    I´ll give a try on these.

    1. These muffins also freeze well in case you want to save some for later. Since they are moist, they will not last many days at room temp without getting a mould so refrigerate or freeze after two or three days. Hope you make them!

  8. These look delicious! I haven't made muffins in ages...just need to purchase a muffin tin. (We moved back to the US 2 years ago and still have not replaced everything we left behind.)

I have bought cupcake liners that can be baked on a cookie sheet - no tin required! They are made in Sweden, the ones I bought at Big Lots, so maybe you don't need to buy a tin after all!

  9. And wonderful they are!! thanks for sharing some with us. I agree and the older I get the more I hate dragging out all the gadgets and so many to clean up. I have found that I can get by on simple things with just a whisk and a long handle spoon. Thanks for sharing!
