Sunday Lunch

Sunday lunch was fast today.

From this:

Loose-leaf lettuce growing in a wire basket on the back deck

To this:

Into the kitchen sink for a good rinse

To this:

Lettuce, yellow bell pepper, cucumber, cherry tomatoes, garlic, green onion, flaxseed, dried cranberries, croutons, Parmesan cheese, salt, pepper, tarragon vinegar, olive oil

And finally, this:

Salad with bacon and potato frittata

Fast because the frittata was cooked yesterday and warmed over for today. It was a very good lunch!

  1. Healthy and delicious meal,as I don't eat bacon I would use cheese in place. Really enjoy these simple meals. Ida

    1. Simple is best! I love bacon. One of my favorite tastes. Do you not eat it for health considerations? I know it's not very healthy but I splurge once in awhile!

    1. If I think about it long enough, I won't eat animals, but am not quite there yet.

  3. I see a new cooking show in the works! As Julia Childs would say, "..Just step outside, pick a few things and 'wa-la' lunch is served..!" :-) Can't wait to toss together that salad - sounds delish!

    1. Do try this salad. I don't even mix the dressing; just splash the vinegar and oil on. Doesn't get easier than that! Glad you got your computer problem solved!

  4. So pretty and looks so delicious. I know the lettuce tasted wonderful - it looked wonderful when I saw it growing in those baskets. This lady makes a WONDERFUL salad.
